Ingredients

  • 1 egg / 2 eggs
  • 50 g / 100 g / (125 ml) sugar
  • 125 ml / 250 ml milk
  • 28 g / 57 g / (25 ml, 2 T) melted butter or margarine
  • 120 g / 240 g / (2 cups) cake flour
  • 2 t / 4 t / (20 ml) baking powder
  • 1/4 t / 1/2 t salt

Method

  • Beat the eggs, adding the sugar.
  • Add half the milk, and the melted butter.
  • Sift together the flour, baking powder and salt and add this to the egg mixture.
  • Gradually stir in the remaining milk, to form a smooth batter.
  • Do not stir once the ingredients have been well blended.
  • Bake on a greased griddle or drop spoonfuls of the mixture on a hot, greased stove plate. The plate is hot enough when a faint, bluish smoke rises from the fat.
  • Cook on one side and when air bubbles begin to show, turn and cook on the other side till golden brown. Use a spatula.
  • Serve with butter and syrup or honey.

Notes

  • The full measurements are sufficient for 25 to 30 crumpets.
