Ingredients

- 1 egg / 2 eggs
- 50 g / 100 g / (125 ml) sugar
- 125 ml / 250 ml milk
- 28 g / 57 g / (25 ml, 2 T) melted butter or margarine
- 120 g / 240 g / (2 cups) cake flour
- 2 t / 4 t / (20 ml) baking powder
- 1/4 t / 1/2 t salt
Method
- Beat the eggs, adding the sugar.
- Add half the milk, and the melted butter.
- Sift together the flour, baking powder and salt and add this to the egg mixture.
- Gradually stir in the remaining milk, to form a smooth batter.
- Do not stir once the ingredients have been well blended.
- Bake on a greased griddle or drop spoonfuls of the mixture on a hot, greased stove plate. The plate is hot enough when a faint, bluish smoke rises from the fat.
- Cook on one side and when air bubbles begin to show, turn and cook on the other side till golden brown. Use a spatula.
- Serve with butter and syrup or honey.
Notes
- The full measurements are sufficient for 25 to 30 crumpets.
