Banana Loaf Simple banana loaf to enjoy with a cup of coffee.

Ingredients

  • 115 g butter or margarine
  • 250 ml sugar
  • 2 eggs
  • 500 ml cake flour
  • 10 ml baking powder
  • 4 to 6 bananas
  • 5 ml vanilla essence
  • 2.5 ml salt

Method

  • Beat butter and sugar till creamy. Add the vanilla.
  • Add the eggs one by one, beating well after each addition.
  • Sift together the dry ingredients and add.
  • Mash the bananas thoroughly with a fork and add.
  • Blend well and turn into a greased, small bread pan.
  • Bake in a moderate oven at 180 degrees for 1 hour.
  • Slice, butter and serve.
  • NB: The flavour will improve if the bread is stored in a tin for a few days.
