Banana Loaf Simple banana loaf to enjoy with a cup of coffee.
Ingredients
- 115 g butter or margarine
- 250 ml sugar
- 2 eggs
- 500 ml cake flour
- 10 ml baking powder
- 4 to 6 bananas
- 5 ml vanilla essence
- 2.5 ml salt
Method
- Beat butter and sugar till creamy. Add the vanilla.
- Add the eggs one by one, beating well after each addition.
- Sift together the dry ingredients and add.
- Mash the bananas thoroughly with a fork and add.
- Blend well and turn into a greased, small bread pan.
- Bake in a moderate oven at 180 degrees for 1 hour.
- Slice, butter and serve.
- NB: The flavour will improve if the bread is stored in a tin for a few days.
