Biscotti Crunchy Italian biscuit things!

Ingredients

  • 110ml Butter
  • 2/3 cup Sugar
  • 1/4 t Salt
  • 1 t Vanilla Extract
  • 2 Eggs
  • 2 cups All Purpose Flour
  • 1 t Baking Powder

Method

  1. Preheat oven to 180 degrees C.
  2. In a bowl, mix the butter, sugar, salt, and vanilla.
  3. Beat in the eggs then add the flour and baking powder.
  4. Grease a cookie sheet or bar pan, place the dough on the pan and form into a log shape. Pat the log into a shape that is roughly 2 cm thick by 12 cm wide and 25 cm long. Bake the biscotti for 25 minutes.
  5. Remove the biscotti log from the oven and let it cool for about 20 minutes, carefully remove from the pan and slice into about 2 cm wide pieces with a serrated or bread knife.
  6. Place each of the biscotti on their sides back on the baking sheet. Bake for 10 minutes, remove and flip over, and bake for an additional 10 minutes. The biscotti may feel slightly soft but it will harden as it cools.
  7. Cool on a rack.
