Herb and Cheese Muffins Muffins made with rosemary, fresh from the garden, and cheese.

Ingredients

  • 500 ml flour
  • 20 ml baking powder
  • 2 ml salt
  • 5 ml dried rosemary, OR
  • 15 ml chopped fresh rosemary
  • 250 ml grated Cheddar cheese
  • 50 ml melted butter OR margarine
  • 250 ml milk
  • 1 egg
  • cayenne pepper to sprinkle

Method

  • Pre-heat oven to 220 degrees C.
  • Sift flour, baking powder and salt into a bowl.
  • Add herbs and cheese.
  • Beat together melted butter, milk and egg, add to dry ingredients. Mix lightly.
  • Spoon into greased muffin pans. Sprinkle each with a little cayenne pepper.
  • Bake for 15 to 20 minutes, or until golden brown and well risen.
  • Serve buttered with chopped fresh chives. Makes 12.
