Herb and Cheese Muffins Muffins made with rosemary, fresh from the garden, and cheese.
Ingredients
- 500 ml flour
- 20 ml baking powder
- 2 ml salt
- 5 ml dried rosemary, OR
- 15 ml chopped fresh rosemary
- 250 ml grated Cheddar cheese
- 50 ml melted butter OR margarine
- 250 ml milk
- 1 egg
- cayenne pepper to sprinkle
Method
- Pre-heat oven to 220 degrees C.
- Sift flour, baking powder and salt into a bowl.
- Add herbs and cheese.
- Beat together melted butter, milk and egg, add to dry ingredients. Mix lightly.
- Spoon into greased muffin pans. Sprinkle each with a little cayenne pepper.
- Bake for 15 to 20 minutes, or until golden brown and well risen.
- Serve buttered with chopped fresh chives. Makes 12.
