Madeira Cake Delicious lemon-flavoured cake.

Ingredients

  • 115 g butter or margarine
  • 125 ml sugar
  • 3 eggs
  • 375 ml cake flour
  • 7.5 ml baking powder
  • 5 ml grated rind of lemon
  • 100 to 125 ml lemon juice
  • 1 ml salt

Method

  • Beat the butter with a wooden spoon, gradually adding the sugar. Beat until light and creamy.
  • Add the eggs one by one, beating well after each addition. Add the lemon rind.
  • Sift together the flour, salt and baking powder and then sift it into the butter mixture, alternately with the lemon juice.
  • Beat the mixture until everything is well blended and has a velvety appearance. Beat thoroughly but do not stir.
  • Line a cake tin with greased paper and pour the batter into it.
  • Place a few shreds of candied peel on top and bake in a moderate oven at 180 degrees for 30 to 40 minutes.
