Madeira Cake Delicious lemon-flavoured cake.
Ingredients
- 115 g butter or margarine
- 125 ml sugar
- 3 eggs
- 375 ml cake flour
- 7.5 ml baking powder
- 5 ml grated rind of lemon
- 100 to 125 ml lemon juice
- 1 ml salt
Method
- Beat the butter with a wooden spoon, gradually adding the sugar. Beat until light and creamy.
- Add the eggs one by one, beating well after each addition. Add the lemon rind.
- Sift together the flour, salt and baking powder and then sift it into the butter mixture, alternately with the lemon juice.
- Beat the mixture until everything is well blended and has a velvety appearance. Beat thoroughly but do not stir.
- Line a cake tin with greased paper and pour the batter into it.
- Place a few shreds of candied peel on top and bake in a moderate oven at 180 degrees for 30 to 40 minutes.
