- 1 egg
- 25 ml milk
- 2.5 ml vanilla essence
- 2.5 cups cake flour
- 10 ml baking powder
- 2.5 ml salt

- Add the egg, milk and vanilla and mix well.
- Add the sifted dry ingredients.
- Mix well and leave for 1 hour or longer in a cool place, before rolling.
- Roll out very thinly, 3 mm, and cut with a knife or biscuit cutter into desired shapes. Sprinkle sugar on top.
- Place on a greased baking sheet, about 2.5 cm apart, and bake in a moderately hot oven at 190 degrees C for 8 to 10 minutes.
- (Note for Salton Mini Kitchen - use a perforated tray, and bake for 17 minutes).
- NB - If a softer dough is preferred, omit 62 ml (1/4 cup) of the flour, and drop teaspoonfuls of the dough on the greased sheet.
Chocolate sugar biscuits
- Sift 100 ml cocoa with the dry ingredients. Bake in a moderately slow oven at 160 degrees.
Orange sugar biscuits
- Use orange juice instead of milk, and the grated rind of 1/2 orange instead of the vanilla. Use 2 egg yolks instead of 1 egg to obtain a good yellow colour.
