Sugar-free Oat Muffins Muffins without sugar?!

Ingredients

  • 2 eggs
  • 1 tsp vanilla essence
  • 2 cups unsweetened apple sauce
  • 1 banana, mashed
  • 1/2 cup agave
  • 4 cups rolled oats
  • 1/4 cup flaxseed meal
  • 1 tbl ground cinnamon
  • 4 tsp baking powder
  • 1 tsp salt
  • 2 cups milk
  • Various crushed nuts and seeds (optional)

Method

  • Preheat oven to 180 C.
  • Mix eggs, vanilla, apple sauce, banana & agave.
  • In a separate bowl, mix oats, flour, cinnamon, baking powder and salt.
  • Combine wet and dry ingredients.
  • Add milk and some crushed nuts and seeds if you want a crunchy texture.
  • Pour into muffin trays and sprinkle with remaining crushed nuts and seeds.
  • Bake for 35-40mins or until done through.
  • Remove from oven and muffin tray, and allow to cool.

Notes

  • Use 1/2 cup cake flour as an alternative to the 1/4 cup flaxseed meal
  • They will stick to paper muffin/cupcake cups!
