Sugar-free Oat Muffins Muffins without sugar?!
Ingredients
- 2 eggs
- 1 tsp vanilla essence
- 2 cups unsweetened apple sauce
- 1 banana, mashed
- 1/2 cup agave
- 4 cups rolled oats
- 1/4 cup flaxseed meal
- 1 tbl ground cinnamon
- 4 tsp baking powder
- 1 tsp salt
- 2 cups milk
- Various crushed nuts and seeds (optional)
Method
- Preheat oven to 180 C.
- Mix eggs, vanilla, apple sauce, banana & agave.
- In a separate bowl, mix oats, flour, cinnamon, baking powder and salt.
- Combine wet and dry ingredients.
- Add milk and some crushed nuts and seeds if you want a crunchy texture.
- Pour into muffin trays and sprinkle with remaining crushed nuts and seeds.
- Bake for 35-40mins or until done through.
- Remove from oven and muffin tray, and allow to cool.
Notes
- Use 1/2 cup cake flour as an alternative to the 1/4 cup flaxseed meal
- They will stick to paper muffin/cupcake cups!
