Potato Curry PO-TAY-TOES!
Ingredients
- 500g Potatoes
- 1 cup Onion, Chopped
- 2 clove Garlic, Crushed
- 1 t Ginger, Crushed
- 1 1/2 t Cumin Powder
- 1 T Coriander
- 3/4 t Chili Powder
- 1 t Turmeric
- 1 t Garam Masala
- 1 cup Tomatoes, Chopped
- 2 T Canola Oil
Method
- Peel and wash potatoes, and cut into large chunks.
- Heat oil and fry potatoes until browned, then drain and put aside.
- Saute onions until browned. Mix garlic and ginger, and add to onions, saute for additional minute. Add a little water and stir.
- Add tomatoes, saute for one minute. Add water and cook until tomatoes turn pulpy.
- Add chili powder, cumin, coriander, turmeric, garam masala, a little water and stir well.
- Add potatoes and mix well for two minutes.
- Add water and salt, cover and cook until potatoes absorb the gravy.
- Serve on rice and garnish with fresh coriander.
