Potato Curry PO-TAY-TOES!

Ingredients

  • 500g Potatoes
  • 1 cup Onion, Chopped
  • 2 clove Garlic, Crushed
  • 1 t Ginger, Crushed
  • 1 1/2 t Cumin Powder
  • 1 T Coriander
  • 3/4 t Chili Powder
  • 1 t Turmeric
  • 1 t Garam Masala
  • 1 cup Tomatoes, Chopped
  • 2 T Canola Oil

Method

  1. Peel and wash potatoes, and cut into large chunks.
  2. Heat oil and fry potatoes until browned, then drain and put aside.
  3. Saute onions until browned. Mix garlic and ginger, and add to onions, saute for additional minute. Add a little water and stir.
  4. Add tomatoes, saute for one minute. Add water and cook until tomatoes turn pulpy.
  5. Add chili powder, cumin, coriander, turmeric, garam masala, a little water and stir well.
  6. Add potatoes and mix well for two minutes.
  7. Add water and salt, cover and cook until potatoes absorb the gravy.
  8. Serve on rice and garnish with fresh coriander.
